触屏式餐饮信息系统设计


摘  要

餐饮企业产品的价值不仅随劳动量而且随着信息量的增加而增加。目前,我国餐饮企业在信息处理方面大多还是以手工操作为主,已明显不能适应市场环境变化的要求,急需建立计算机管理系统。根据餐饮企业规模及发展阶段不同,可建立单机系统、联机系统、网络结构系统三种基本结构类型的管理信息系统。通过快捷准确地信息处理,提高运作效率,稳定服务质量,增强顾客的满意度和忠诚度,增加营销手段的灵活性,控制成本,创造更高收益。本论文主要针对饭店餐饮管理中的一些问题,将其与计算机信息管理系统结合起来,实现酒楼管理信息计算机化、系统化,将酒楼管理中的工作流转化成比较科学化、规范化的业务流程,使管理基础数据更加准确化,管理人员摆脱了事务性工作,转而从事管理专业工作,为经营决策提供了快捷和强大的数据支持。

Abstract

At present ,food indust ry has an urgent need to build computer management system ,which can take place of manual information management ,to adapt it self to this information age. Depending on the different scale and development level , there are three patterns to take : single - computer system , combined computer system and networksystem. Through taking advance computer system , we can speed up.information processing ,promote efficiency and provide more satisfyingervice to customers , thus bring more benefit. This paper mainly in the hotel restaurant management problems of its computer information management system and combine the realization of the restaurant management information computerized, systematic and restaurant management will flow into the work of relatively scientific,tandardized business processes, More accurate data base management, personnel management from the business, to switch to professional management, operational decision-making for a fast and powerful data support.

前  言
由计算机及网络技术发展所引起的信息化浪潮席卷当今世界,包括餐饮业在内的一切行业都受到了影响。信息化对企业的影响主要体现在两个方面:一是企业内部的计算机管理;二是网上营销。现代餐饮企业的特征之一,就是其消费内容的综合性。餐饮企业既要注重不断开发新产品,打开新市场,更要注重产品价值的扩充。因为餐饮企业所提供的产品的价值,不仅随着劳动量的增加而增加,而且随着信息量的增加而增加。因此,作者专门针对餐饮酒楼开发了一套针对虚拟企业的自动化管理系统──《唐朝酒家》餐饮信息系统(TCCIS)。系统充分洞察和分析餐饮管理的现状,并对酒楼管理的流程有深刻的理解和准确的把握,帮助您的酒楼利用计算机强大的数据处理能力和流程优化能力,实现自动化管理,简化酒楼的工作流程,减少浪费及人为管理的疏漏现象,重新优化配置企业资源,把经营成本降低到最低。在这里介绍我们自己开发的餐饮企业管理信息系统,以期对餐饮企业在新的市场环境下蓬勃发展有所帮助。
 
1  项目分析
1.1    背景介绍
目前,我国餐饮企业在信息处理方面大多还是以手工操作为主,即使在已使用计算机的企业中,其计算机的使用也主要是用于后台的收款、报表打印等一些简单的事务性工作,没有把后台与前台的业务联接起来,这显然已不能满足餐饮企业的发展需要。面对经济全球化的市场环境,餐饮企业急需建立计算机管理系统,快捷准确地进行信息处理。中国是举世闻名的美食大国,拥有五千年的饮食文化和巨大的餐饮市场,随着人民生活水平和生活方式的转变,餐饮业具有巨大的投资市场,被称为中国的黄金产业,但同样也应看到,餐饮业不仅面临着巨大的发展机遇,也面临着前所未有的挑战和考验。这些挑战主要来源于以下几方面:
◆人才的专业化程度不够导致内功不足:因餐饮业门坎较低,中国的大多数餐饮企业的老板是从小店发展起来的,家族式管理的居多,还没有发展到聘请职业经理人,许多还是"人治",并没有一套现代企业制度和监督管理体制,所以从观念意识、经营思想和管理水平还有待专业化。
◆应变能力差,缺乏先进的信息工具:现在的餐饮市场火爆,许多以前做电子、房地产等其他行业的老板都凭借雄厚的资金实力挤进餐饮市场,争先恐后的上规模、上档次、比菜品、比服务、拼价格,使餐饮市场竞争激烈,但是许多餐饮企业缺乏对市场的应变能力和灵敏的信息工具,在现今网络经济的时代,许多餐饮企业还处在手工及半手工状态,即使有计算机也只当个点菜器和计算器用,并没有真正通过计算机系统来实现改造流程、强化管理、降低成本、堵漏节流等作用。
◆缺乏科学和标准的管理体系:国外著名的快餐连锁经过上百年的探索都形成了标准化的工作流程和方法。中餐因其菜品的多样化和特色化的服务很难实现标准化管理,这使中餐企业的成本控制很难实现,但近两年也出现了引进快餐式经营特点的中餐企业,从流程、服务、出品都开了中餐标准化的先河。
1.2    可行性分析
1.2.1 国内现状(社会可行性)
据悉,我国现有各类饭店、餐馆近400多万家,年营业额超过7300亿元人民币,并保持着高达15%至17%的年增长率。
据有关权威报道,中国餐饮信息化仍处在初级阶段,之所以出现摇摆停滞不前的现象,主要原因包括三个方面:
第一,企业领导人缺乏对于先进管理理念的理解,对信息化的认识不够。由于国内多数餐饮企业是通过小本经营、勤俭持家而积累起来的,众多老板们的管理水平较低,而且不舍得投入。
第二,中国劳动力的成本较低,而IT技术成本较高,两者之间的差距很大,餐饮企业更愿意以人工方式完成信息数据的搜集、统计、分析工作。
第三,餐饮行业具有许多与众不同的自身特点。在中国,许多餐饮企业喜欢“打一枪换一个地方”,餐馆改门门庭是司空见惯的事情。
既然企业业务经营难以固定,信息化工作也就无从谈起。虽然对于餐饮企业来说,财务管理应该是帮助最大的管理信息系统,但是由于有些企业有意造假账逃税,这时候财务管理系统反而成了“绊脚石”,因此更要避而远之。
从另一角度来看,随着社会信息化整体水平的飞速提高,餐饮业也在这种大潮中逐渐提高了对信息化重要性的认识,呈现出一种良好的上升势头。一些权威人士预测,今后3至5年内,信息数字技术产品在中国餐饮行业的应用将达到一个高峰,最大容量可达2300亿元人民币。正因如此,即使国内IT和信息化建设方面的展会比比皆是。

1.2.3  技术可行性分析
随着酒店业竞争的加剧,酒店之间客源的争夺越来越激烈,酒店需要使用更有效的信息化手段,拓展经营空间,降低运营成本,提高管理和决策效率。企业的信息化管理,从数字模型的角度,简单的理解是一个数据流转的过程,即企业在运营中能积累什么样的数据,用什么样的方法尽量采集这些数据,能够为管理者总结什么样的数据,通过总结的这些数据最终为决策提供什么依据。
信息化的需求对于决策者和管理者的角色不同,理解层次也有不同,大体分为三个层次:
第一个层次是运营数据的表面提取,目标是为了完善已有的管理模式的信息化代替,这里主要考虑的是信息系统的效率和及时性。
第二个层次是运营数据的逻辑控制,目标是为了把握经营的控制节点,堵塞管理漏洞,这个层次要求的管理流程与信息系统的严密整合。

2.1    餐饮信息系统需求分析
随着我国市场经济的快速发展,各行业都呈现出生机勃勃的发展景象,其中餐饮业的发展尤为突出。近两年来已呈现出高速发展的态势。但在快速发展的同时,餐饮业在日常经营管理中仍普遍采用手工管理方式,整体科技含量低。随着餐饮企业规模和数量的不断增长,手工管理模式无论是在工作效率、人员成本还是提供决策信息方面都已难以适应现代化经营管理的要求,因此制约了整个餐饮业的规模化发展和整体服务水平的提升。有效的管理成为了一个难题,为能有效的解决这些问题提高现代酒楼的经济效益,在这些酒楼中采用工作流技术,结合餐厅绿色管理内容,实施计算机管理信息系统不视为一条有效的解决途径。
本论文主要针对饭店餐饮管理中的一些问题,将其与计算机信息管理系统结合起来,实现酒楼管理信息计算机化、系统化,将酒楼管理中的工作流转化成比较科学化、规范化的业务流程,使管理基础数据更加准确化,管理人员摆脱了事务性工作,转而从事管理专业工作,为经营决策提供了快捷和强大的数据支持。把计算机用于餐饮企业管理,可在很大程度上提高管理者分析和决策的科学性,提高经营管职水平,带来更多的顾客,使企业取得更好的经济效益。
总之,这套系统的开发只是把计算机技术应用于餐饮酒楼管理中的小部分,系统中还存在许多不足,需要不断改进和完善。但同时也坚信随着科学技术的不断发展,通过继续努力不断完善餐饮管理信息系统的功能,在不久的将来必将能更加深入的发展下去,必将能为我国餐饮业的信息化进程贡献其微薄之力。
