摘 要:虾青素是一种酮式类胡萝卜素,可作为抗氧化剂、色素和食品添加剂等,在医药、食品、水产养殖等方面具有非常广泛的应用。本文概述了虾青素的结构、性质、来源、功能、应用、发展前景等。本次实验用红法夫酵母发酵生产虾青素,它是天然可产虾青素的主要微生物之一,研究通过红法夫酵母发酵法生产得到虾青素的方法以及生产条件是本次实验的主要目的。研究方法主要是先通过单因素试验发现培养基的最佳氮源是尿素,最佳碳源是蔗糖,最佳的接种量是6%。在此基础上用正交试验设计法对发酵培养基的成分进行了初步优化,为进一步工业化生产虾青素提供参考依据。
