摘要:改革开放以来,我国餐饮业取得了巨大的发展。中国加入WTO以后,国际餐饮业将进一步进入我国餐饮业市场,我国餐饮业也将走向世界,这将使我国的餐饮业面对更激烈的竞争。而营销是餐饮业应对国际竞争和提高竞争力的重要手段。因此,要使我们的餐饮企业做大做强,营销工作显得格外重要。本文从餐饮业营销的实质是服务营销、服务营销的策略等方面进行了论述,旨在探索餐饮营销之路。

引言
近年来,我国餐饮业得到了前所未有的发展。然而透过种种“繁荣”景象,我们也不难发现,真正办得好、办得成功的餐饮企业并不多见,有许多甚至只在市场上昙花一现。究其原因,经营管理的失败固然是其一,但营销工作是否到位乃是一个不容忽视的重要因素。
一、餐饮业营销的实质是服务营销
1.1服务的特点
服务产品具有区别于实物产品的四个特点:一是服务具有无形性。服务是一种行为或活动,是非实体的、无形的、抽象的,如厨师的烹饪活动。二是服务具有不可分性。服务的生产、交易和消费是同时发生的。三是服务具有易变性。服务是一种人的活动,既有服务人员的参与,又有顾客的参与,人的因素常常干扰服务活动,使得服务活动容易走样。四是服务具有不可储存性。服务的生产和消费是同时发生的,生产的起始和结束就是消费的起始和结束,不存在生产结束与消费起始之间的储存期。
