摘 要:本论文以磷脂、双氧水、乳酸为主要原料对大豆磷脂进行羟基化反应,用正交实验方法对羟基化条件进行优选,用标准方法测试产品的各种性能,包括了碘值、过氧化值、酸价、水分,从而得到了最佳反应条件,同时也得出了磷脂碘价、过氧化值、酸价与改性磷脂亲水性能的关系。改性后的浓缩磷脂碘价降低, 亲水性能明显提高,拓宽了磷脂的应用范围,更好地满足工业上的需要。羟化反应各因素对碘价、酸值、过氧化值等品质都有影响,因此可以通过控制生产条件得到亲水亲油性能不同的改性磷脂产品。

Abstract: This article to phospholipids、hydrogen peroxide、lactic acid as the main raw materials of soybean lecithin for hydroxy-reaction By orthogonal experimental methods of optimizing the conditions of hydroxyl With the standard method of testing a variety of products,including the iodine value、 the peroxide value、the price of acid、water,which has the best conditions,but also that the price of phospholipid iodine、peroxide value、price and the acid modified phospholipid hydrophilic properties of relations. Lecithin modified after the lower price of iodine,hydrophilic performance markedly improved,widened the scope of application of lecithin, to better meet the needs of industry. Hydroxylation various factors on the price of iodine, acid,peroxide value,and so affect both the quality and therefore can control the production conditions of different hydrophilic oil-modified lecithin products.
